The Rugby Grille's Monte Cristo sandwich

Get this recipe courtesy of Chef Andrew Alcid from The Rugby Grille located inside the Townsend Hotel in Birmingham. The Townsend is one of only two hotels in all of Michigan to earn a Forbes Travel Guide 2013 four-star award.

Ingredients:
1 ea Challah Burger Bun
2 ea Whole Fresh Eggs
4 oz Prosciutto di Parma, Shaved Thin
1 oz Smoked Bacon
2 oz Gruyere Cheese
¼ C Fresh Arugula
4 oz Heavy Cream
1 T Mustard Powder
As Needed Salt and Pepper
2 T Fruit Preserve
As Needed Clarified Butter

Method:
Mix together the cream, dry mustard, and one egg; season with salt and pepper.  In a skillet, sear the bacon and prosciutto with the clarified butter.   Place the cheese over the prosciutto to melt.  Dip the Challah bun in the egg and cream mixture; place in the skillet with the bacon and prosciutto.  Flip the bun over once it is golden brown.  In a separate Teflon pan over medium heat, add clarified butter and one egg.  Once the cheese is melted and the bun is toasted, assemble the sandwich with bacon, prosciutto, cheese, arugula, and top with the sunny side egg.  Serve the fruit preserve on the side.
