Recipes using trendy quinoa, kale & coconut oil

Some of the biggest food trends include quinoa, kale and coconut oil.

But, many people don't know how to pronounce "quinoa," much less cook with it.

Kim Miller, of Fit Mom Diet, teaches us two recipes using the trendy, healthy ingredients.

Quinoa Kale Salad
Recipe by The Fit Mom Diet Team
2 cup of water
1 cup of Inca Red Quinoa
10 leaves of kale cut into small pieces
3 tablespoons of coconut oil
2 tablespoons of lemon juice
1 tablespoon of Dijon mustard
1 large garlic clove minced
1 teaspoon of cracked ground pepper
1 teaspoon of sea salt
½ cup crumbled feta cheese
1 cup chopped walnuts
1 cup of unsweetened cranberries

Instructions:
1)    Bring water to boil in saucepan.  Stir quinoa into boiling water and reduce heat to low.  Place cover over saucepan and allow water to full absorb. Remove from heat and allow quinoa to sit covered for 5 minutes.
2)    Whisk coconut oil, lemon juice, Dijon mustard, garlic, pepper and sea salt into bowl until mixed.  Place kale in a large bowl, drizzle dressing over kale and stir thoroughly.  
3)    Add fully cooled quinoa, feta, walnut and cranberries to kale.  Mix until fully incorporated and serve.  

No-Bake Banana Coconut Protein Bars  
Recipe by The Fit Mom Diet Team

(Makes 9 squares)
2 cups old fashioned oats
3 tbsp unsweetened coconut
1 tbsp milled flaxseed
1 tbsp hemp hearts
½ cup natural peanut butter
½ cup coconut oil, melted
3 scoops vanilla protein powder
1 large ripe banana
¼ cup dark chocolate chips (optional)

Instructions:
1)    Mash banana and add all other ingredients(except chocolate if using it). Press into square pan.
2)    Melt chocolate and spread a thin layer over top of bars.
3)    Set in freezer for 30 minutes, remove, cut into 9 equal squares and wrap individually. Store in freezer an easy grab and go snack.
