Good Day Cafe: Olive Garden

With large portions at reasonable prices, meals at the Olive Garden restaurant chain are a great option for some families.

Richard Rodriguez, director of operations for the Olive Garden, prepared 'lasagna classico' in the Good Day Cafe.

Lasagna Classico Recipe:

Prep Time:

2 hours 30 minutes

Cook Time:

45 minutes to 1 hour, 30 minutes to set

Serving Size: 8 dinner portions

Lasagna Cheese Mix 2 lb. container whole milk ricotta cheese 1 cup Shredded Mozzarella cheese ½ cup Grated Romano Cheese 1 Tbsp fresh chopped parsley ¼ tsp Salt 1/8 tsp black pepper 1 Tbsp Fresh chopped Basil 1 Tbsp Fresh chopped oregano 1 whole egg

Meat Sauce Ingredients 3 Tbsp. olive oil 1 onion, finely chopped, 6 oz. 2 garlic cloves, finely chopped 12 oz. ground beef 8 oz. Italian sausage, skinned 2 28 oz. cans crushed tomatoes, chopped (ground) 1/4 tsp. dry basil 1/4 tsp. dry oregano Salt to taste Pepper to taste 12 Lasagna Noodles cooked

Pam release spray

1-1/2 cups shredded mozzarella cheese

Ingredients

4 Tbsp olive oil

2 onions, finely chopped

2 carrots, finely chopped

2 celery stalks, finely chopped

4 garlic cloves, finely chopped

1 lb ground beef

12 oz Italian sausage, skinned

2 cups red wine

36 oz can crushed tomatoes, chopped (ground)

2 tsp fresh rosemary, chopped (1/2 tsp dry)

2 tsp fresh sage, chopped (1/2 tsp dry)

Salt to taste

Pepper to taste

Ingredients

6 Tbsp olive oil

3 onions, finely chopped

3 carrots, finely chopped

3 celery stalks, finely chopped

6 garlic cloves, finely chopped

1 1/2 lb ground beef

18 oz Italian sausage, skinned

3 cups red wine

48 oz can crushed tomatoes, chopped (ground)

3 tsp fresh rosemary, chopped (3/4 tsp dry)

3 tsp fresh sage, chopped (3/4 tsp dry)

Salt to taste

Pepper to taste

Procedures

Prepare Sauce ahead and chill

1. HEAT oil in a large pan. Add onion and garlic and cook about 5 minutes. Add meat and cook 10 minutes over medium heat, stirring occasionally.

2. Add tomatoes and remaining ingredients and stir. Simmer for about 5 minutes.

Prepare Lasagna noodles

3. Prepare a total of 12 lasagna noodles to build Lasagna

Prepare Lasagna Cheese Mix

4. Blend ingredients in large mixing bowl with rubber spatula

Build Lasagna& Bake Lasagna

5. Spray bottom of 9 x 13 x2 ½ inch baking dish with Pam

6. Using rubber spatula spread 8 fl. oz. of meat sauce on bottom of pan

7. Place 3 lasagna layers overlapping on to meat sauce

8. Measure 1 cup of Lasagna cheese mix onto noodles and using rubber spatula spread evenly

9. Measure 1 cups of meat sauce onto cheese mix

10. Repeat steps 7-9 two more times

11. Top with three lasagna noodles remaining 1 cup meat sauce and 1 ½ cups shredded mozzarella

12. Wrap with foil

13. Bake in oven at 325ºF for approximately 45 min. to 1 hour until internal temperature is 165º

14. Lower oven temp to warm and allow to set for 30 minutes

15. Cut into squares 2 rows long by 4 rows wide, plate and garnish with fresh parsley sprinkle
