Red Bird Kickin Chicken Wings:
2 to 3 lbs. Chicken Wings
3 large tomatoes
3 to 5 jalapeños (use more if You want it hotter)
½ medium red onion
¼ bunch cilantro
1 Tbsp. Kosher Salt
¼ cup water
Method for Salsa: Char tomatoes and jalapenos on grill. Remove from grill and put into a blender cup. Add red onion and cilantro along with the ¼ cup of water. Blend until all ingredients are incorporated and smooth and add Kosher Salt and blend for 30 seconds.
Rinse chicken wings with cold water and pat dry. Place chicken wings in bowl or pan and cover with salsa to marinade. Cover wings and let them marinade in refrigerator for 6 to 10 hours. Remove wings from refrigerator and grill on barbecue grill. Make sure wings reach an internal temperature of 165 degrees and enjoy!!
Cardinals Chicken and Cream Cheese Stuffed Chilies:
5 to 8 New Mexico Hatch Chilies
2 lbs. cooked and shredded chicken
½ lb. softened cream cheese
1 Tbsp. Chili Powder
½ Tsp. White Pepper
1 Tsp. black Pepper
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
3 Tbsp. Franks Red Hot Sauce
Method for stuffed Chilies: Roast Chilies on grill and peel off skin. Place chicken and all of the remaining ingredients into a food processor and mix until all ingredients are mixed evenly and smooth. Cut a slit in chili and stuff with the chicken and cream cheese mixture. Place 1 or 2 toothpicks soaked in water in chili to secure mixture in the chili. Grill stuffed chilies until they reach an internal temperature of 165 degrees and serve.
