The Arizona Cardinals just wrapped up their first pre-season game Friday night and now we're in full blown football mode -- and there's nothing that goes better with football than chicken wings!
Mesquite Smoked Wings
Makes 8-10 servings
8 lb of chicken wings (drumette & flat section)
1 ½ teaspoon salt
1 teaspoon ground black pepper
4 teaspoons smoked-paprika
4 teaspoons dried thyme
4 teaspoons dried oregano
½ teaspoon ground cayenne pepper
Mesquite wood log or chunks
In a large bowl, combine salt, black pepper, paprika, thyme, oregano, and cayenne.
Add chicken wings to your bowl and use your hands to evenly cover wings with the spice mixture.
Place seasoned wings in a sealed bag or container and place in the refrigerator overnight.
Next day, place the mesquite in smoker box (or grill with indirect heat) and light.
Once the flames go down, place chicken wings in a single layer on the rack.
Close smoker lid, maintain temperature at 300 degrees and smoke for about 2 hrs.
