Recipe: Macayo's guacamole

We're learning how to prepare fresh guacamole with Macayo's!

STEP ONE:
18-lbs             Avocados, Haas variety, fresh, ripe

STEP TWO:
3-oz                Peppers, jalapeños, fresh, finely minced
3-lbs               Chiles, green diced, drained (#10-can)
6-oz                Cilantro, fresh, no stems, finely chopped

STEP THREE:
3-oz                Lemons, juice, fresh, no seeds (fluid ounces)
2-oz                Tabasco
4-oz                Garlic, powder
3 ½-oz            Salt, table

PRODUCTION/ASSEMBLY STEPS:

  1. Place the cleaned avocados into a suitably sized mixing container.
  2. Immediately add the minced jalapeño peppers, cilantro, diced green chiles, Tabasco sauce and seasoning.  Mix the ingredients together, while mashing the avocados.

NOTE:  1-cup diced tomatoes per 1/6-pan added to guacamole
