Recipe: Kelly's at Southbridge BBQ Braised Short Rib Sandwich

Cook this up for Pops this Father's Day! Here's the recipe for BBQ braised short rib sandwiches, provided by Kelly's at Southbridge Chef Israel Medina.

  • House BBQ Sauce, Tomato, Fresh Spinach, Pickled Fresno Chilies
  • House BBQ Sauce - 1.5 oz
  • Braising Liquid (Short Rib Juices, Chicken stock, Mirepoix) - 1.5 oz
  • Add in hot Saute pan
  • Add 5 oz of Short rib
  • Simmer until tender and internal temperature reaches 165 degrees center of the Short Rib
  • Pickled Fresno Chilies
  • Pickled in White wine vinegar, Sugar, Water, White wine, Mustard seed, Chile Flakes, Star Anise. Bring to boil and cool. Once cooled, pour over thinly sliced Fresno Chilies (let sit for 24 hours)
  • Toast Brioche Bun with Garlic Butter
  • Add Short Rib with House BBQ sauce on bottom bun, sliced tomato (2), 1/4 cup fresh spinach, 1 oz Pickled Fresno Chilies, top bun
  • Serve with a delicious side of Kelly's Homemade Chips :)
