Pure Food 2U and 2 Unique Caterers' Chef Kelli Lewton offers some ideas for a stress-free Summer Graduation Party:

People are always looking for a unique/fun food theme that is manageable, I suggest a slider bar. Kids as well as adults love little packages of slider surprise! I recommend choosing three varieties of sliders keeping in mind the age groups & tastes; perhaps more fancy pants & adventurous sliders for the adults and simpler ones for students and little people.

1. If you want to work ahead no problem most slider varieties prep ahead great! Grill your patty; add toppings & place prepared burgers on sheet tray cover with foil. Heat the following day in 350 degree oven for about 8 minutes until hot through. Some slider varieties may need to be finished day of if they have toppings such as Cole slaw that should not be heated.

2. Pair your Slider duo or trio with fun variety of upscale snacks and chips; maybe 6 varieties all displayed in fun color dollar store buckets or bowls

3. Pick a fun vessel to hold your slider & snack fun; paper boat or fun shaped plate or wild colored something!

4. Think about creating a brand for your graduate by making labels for the vessels that will hold menu items.

5. Try your local Whole Foods Market they have over 8 fun burger blends that will make awesome sliders as well as a full line of sustainable seafood, groovy snack and chips!

*Can be prepared with all beef ground Angus sirloin or lean ground turkey


Kelly's Tuscan Turkey Burger (Potato roll and spicy slaw)

Ingredients
· 1 1/4 pounds ground turkey (not to lean)
· 12 slices fresh mozzarella
· 2 Tablespoons basil, cut in thin strips
· 1 tablespoon Dijon mustard
· 1 teaspoon fresh garlic , finely minced
· 2 tablespoons chopped fresh basil
· Sea salt and freshly ground black pepper
· Olive oil for greasing grill grates
· 12 wheat slider rolls
· Romaine lettuce torn into bite-size pieces
· Tomato Jam, recipe follows

Directions
1. Preheat the grill to medium-high heat.
2. Mix the ground turkey, mustard, shallot, basil, salt, and pepper together in a large bowl. Form into 12 small 1/2-inch thick patties.
3. Brush the grill grates with olive oil with a clean tea towel to keep the turkey from sticking. Grill the patties for about 2-3 minutes, and then turn and continue to cook the other side for another about 2 minutes, add fresh mozzarella and let melt for the last minutes.
4. Place the rolls on the warmer rack to toast during the last few minutes of grilling.
5. Open bun, lay lettuce down, top with burger and a dollop of tomato jam
6. To assemble burgers, place a patty between the buns and top with lettuce and Tomato Jam.

Tomato Jam:
· 1 pound plum tomatoes cored and chopped (or canned crushed Italian tomatoes)
· 3 tablespoon Balsamic vinegar
· ¾ cup organic brown sugar
· 1 teaspoon sea salt
· 1/2 teaspoon ground cumin
· 1/4 teaspoon ground ginger
· 1/4 teaspoon ground allspice

Method
1. Add all the ingredients to a medium saucepan and bring to a boil over high heat. Reduce the heat and simmer, stirring occasionally, until the tomatoes have dissolved and what remains is a thick jam-like consistency, about 1 hour. Cool before serving.
2. The jam can be stored in an airtight container in fridge for up to two weeks.
