More than 100 restaurants will donate proceeds of sales to the Southwest Center for HIV and AIDS on Thursday.

Chef Matt Howard shares a recipe for Tunisian Boreks and has the details about the event.

Tunisian Boreks

  • 10# cooked chicken and chicken fat
  • 1 quart mayo
  • 2 T fresh or dry thyme
  • 1 cup capers drained
  • 1 cup lemon juice
  • 2 T lemon zest
  • 3/4 cup minced garlic
  • 2 T salt
  • 1 T pepper
  • 1cup cream
  • check seasoning

Preparation Method

  • pulse cooked cooled meat in robot coupe to fine grind
  • add all ingredients and blend by hand in bowl
  • check seasoning and adjust as needed.
  • pipe into phyllo sheet shortways and roll like cigar
  • generously apply pan spray to entire log
  • thickness of piped meat should be about the thickness of your thumb.
  • can freeze until needed
