Lance Whipple, executive pastry chef at the Four Seasons Resort, shows how to make cranberry bliss bars like they make at the resort (and at a little coffee place you may frequent).
Cranberry Bliss Bars
Butter 8 oz
Brown Sugar 8 oz
Sugar 4 oz
Eggs 2 ea
Vanilla 2 t
Baking Soda 1 t
Salt 1 t
Cake Flour 10 oz
White Choc, chunks 4 oz
Dried Cranberries 4 oz
Almond Pieces 2 oz
Orange Zest 1 ea
Method:
Cream butter, brown sugar, and sugar. Mix eggs and vanilla, then add slowly. Sift together baking soda, salt, and cake flour; add to mix. Add chocolate, cranberries, pecans, and zest. Spread into a greased 9 x 13 pan. Bake in a 340 oven until a toothpick inserted comes out clean.
Grand Marnier Cream Cheese Frosting:
Powdered Sugar 2T
Cream Cheese, softened 8 oz
Orange Zest-optional 1 ea
Grand Marnier 1 oz
Method:
Mix the cream cheese until soft. Add sugar, orange zest and Grand Marnier. Spread over bars and top with dried cranberries.
