
Chef Payton Curry shares some recipes with us that something different with your Thanksgiving leftovers.
Vietnamese-style Turkey Naengmyeon (Cold Noodles)
8 oz. shredded turkey
1 pkg soba noodle cooked
1 bu mint
1 bu cilantro
1 bu basil
2 ea scallions
2 ea carrots shredded
2 cups turkey stock, 6 cups reduced by 3
2 ea eggs scrambled
Place chilled ingredients around noodles in a fancy fashion. Using chopsticks grab and twist and dip into warm broth and enjoy.
Turkey Pho
6 qts turkey stock (steep turkey in chicken broth)
1 lb shredded turkey
3 ea cilantro sprigs
3 ea mint sprigs
8 leaves basil
1 pkg rice noodre of choice, cooked
Bean sprouts
Grated ginger
Heat broth. Place cooked noodles in bowl. Add turkey to broth to warm thru. Ladle over noodles and serve with herbs, lime juice, sprouts, hot sauce & fish sauce.
